INGREDIENTS

  • 200 grams paneer (cottage cheese), crumbled
  • 1 medium-sized onion, finely chopped
  • 1 medium-sized tomato, finely chopped
  • 1 green chili, finely chopped
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon coriander powder
  • 1/4 teaspoon red chili powder (optional, adjust to taste)
  • Salt to taste
  • Fresh coriander leaves, chopped (for garnish)
  • Lemon wedges (for serving)

INSTRUCTIONS

  1. Heat a non-stick pan or skillet over medium heat. Add a few drops of oil and spread it across the pan.
  2. Add the chopped onions and green chili to the pan. Sauté until the onions turn translucent.
  3. Add the ginger-garlic paste and sauté for another minute until the raw smell disappears.
  4. Add the chopped tomatoes and cook until they become soft and mushy.
  5. Add the turmeric powder, cumin powder, coriander powder, red chili powder (if using), and salt. Mix well.
  6. Crumble the paneer and add it to the pan. Mix everything together so that the spices coat the paneer evenly.
  7. Cook for 3-4 minutes until the paneer is heated through and well combined with the spices.
  8. Turn off the heat and garnish with freshly chopped coriander leaves.
  9. Serve hot with roti, paratha, or as a filling in a whole wheat wrap.
  10. Squeeze some fresh lemon juice over the bhurji before serving for a tangy flavor.

TIPS

  1. Use homemade paneer or choose low-fat paneer to reduce the calorie content.
  2. Adjust the spices according to your taste preference. You can increase or decrease the amount of red chili powder for spice level.
  3. Adding a pinch of garam masala powder at the end can enhance the flavor of the bhurji.
  4. For a healthier option, you can add finely chopped spinach or other leafy greens to increase the nutrient content.
  5. Make sure to cook the bhurji on medium heat to prevent the paneer from becoming rubbery.
