INGREDIENTS
- 200 grams paneer (cottage cheese), crumbled

- 1 green chili, finely chopped
- 1 teaspoon ginger-garlic paste
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon coriander powder
- 1/4 teaspoon red chili powder (optional, adjust to taste)
- Salt to taste
- Fresh coriander leaves, chopped (for garnish)
- Lemon wedges (for serving)
INSTRUCTIONS
- Heat a non-stick pan or skillet over medium heat. Add a few drops of oil and spread it across the pan.
- Add the chopped onions and green chili to the pan. Sauté until the onions turn translucent.
- Add the ginger-garlic paste and sauté for another minute until the raw smell disappears.
- Add the chopped tomatoes and cook until they become soft and mushy.
- Add the turmeric powder, cumin powder, coriander powder, red chili powder (if using), and salt. Mix well.
- Crumble the paneer and add it to the pan. Mix everything together so that the spices coat the paneer evenly.
- Cook for 3-4 minutes until the paneer is heated through and well combined with the spices.
- Turn off the heat and garnish with freshly chopped coriander leaves.
- Serve hot with roti, paratha, or as a filling in a whole wheat wrap.
- Squeeze some fresh lemon juice over the bhurji before serving for a tangy flavor.
