Vegan Dhokla is a delightful and spongy Indian snack or appetizer that’s entirely plant-based. It’s made from fermented rice and chickpea flour, resulting in a light and fluffy texture. INGREDIENTS

  • 1 cup rice flour
  • 1/4 cup chickpea flour (besan)
  • 1/4 cup yogurt (use dairy-free yogurt for a vegan version)
  • 1 teaspoon ginger paste
  • 1 green chili, finely chopped
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon baking soda
  • Salt to taste
  • Water, as needed

INSTRUCTIONS

  • In a mixing bowl, combine the rice flour, chickpea flour, yogurt, ginger paste, green chili, turmeric powder, and salt.

  • Add water gradually to make a smooth batter. It should be thicker than pancake batter but thinner than dosa batter.

  • Allow the batter to rest for about 15-20 minutes.

  • Just before steaming, add the baking soda and mix well.

For Steaming:

  • Grease a dhokla plate or a shallow steaming vessel.

  • Pour the batter into the plate.

  • Steam the batter for about 15-20 minutes or until a toothpick inserted comes out clean.

  • Remove from heat and let it cool.

For Tempering:

  • Heat oil in a small pan, add mustard seeds, and let them crackle.

  • Add cumin seeds, asafoetida, curry leaves, and green chilies. Sauté for a minute.

  • Add water and bring it to a boil.

  • Pour the tempering mixture evenly over the steamed dhokla.

  • Drizzle lemon juice and garnish with chopped fresh coriander leaves.

  • Cut the dhokla into squares or diamonds and serve.

TIPS

  • You can customize the spiciness of the dhokla by adjusting the amount of green chili in the batter and tempering.

  • Serve vegan dhokla with green chutney, tamarind chutney, or a yogurt-based dip.
