Vegan Dhokla

INGREDIENTS
- 1 cup rice flour
- 1/4 cup chickpea flour (besan)
- 1/4 cup yogurt (use dairy-free yogurt for a vegan version)
- 1 teaspoon ginger paste
- 1 green chili, finely chopped
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon baking soda
- Salt to taste
- Water, as needed
INSTRUCTIONS
In a mixing bowl, combine the rice flour, chickpea flour, yogurt, ginger paste, green chili, turmeric powder, and salt.
Add water gradually to make a smooth batter. It should be thicker than pancake batter but thinner than dosa batter.
Allow the batter to rest for about 15-20 minutes.
Just before steaming, add the baking soda and mix well.
For Steaming:
Grease a dhokla plate or a shallow steaming vessel.
Pour the batter into the plate.
Steam the batter for about 15-20 minutes or until a toothpick inserted comes out clean.
Remove from heat and let it cool.
For Tempering:
Heat oil in a small pan, add mustard seeds, and let them crackle.
Add cumin seeds, asafoetida, curry leaves, and green chilies. Sauté for a minute.
Add water and bring it to a boil.
Pour the tempering mixture evenly over the steamed dhokla.
Drizzle lemon juice and garnish with chopped fresh coriander leaves.
Cut the dhokla into squares or diamonds and serve.
TIPS
You can customize the spiciness of the dhokla by adjusting the amount of green chili in the batter and tempering.
Serve vegan dhokla with green chutney, tamarind chutney, or a yogurt-based dip.
