Vegan Gobi Manchurian is a delightful Indo-Chinese dish featuring crispy cauliflower florets tossed in a flavorful, tangy, and slightly spicy sauce. This dish combines the earthy goodness of cauliflower with the bold flavors of Chinese cuisine, making it a popular favorite among vegans and non-vegans alike.

INGREDIENTS

For the Cauliflower:

  • 1 medium-sized cauliflower, cut into florets
  • 1 cup all-purpose flour
  • 2 tablespoons cornstarch
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Water (for the batter)
  • Vegetable oil (for frying)

For the Manchurian Sauce:

  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 1 bell pepper, thinly sliced
  • 2-3 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 2-3 green chilies, finely chopped (adjust to taste)
  • 2 tablespoons soy sauce (use tamari for a gluten-free option)
  • 1 tablespoon tomato ketchup
  • 1 teaspoon chili sauce (adjust to taste)
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper
  • 1/4 cup water
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

INSTRUCTIONS

Preparing the Cauliflower:

  1. In a bowl, mix the all-purpose flour, cornstarch, ginger-garlic paste, salt, and black pepper.
  2. Add water gradually to form a smooth batter. It should be thick enough to coat the back of a spoon.
  3. Dip each cauliflower floret into the batter, ensuring it’s well-coated, and place them on a plate.
  4. Heat vegetable oil in a deep frying pan. Once hot, fry the cauliflower florets until they turn golden brown and crispy. Remove and place them on a paper towel-lined plate to drain excess oil.

Making the Manchurian Sauce:

  1. In a separate pan, heat 2 tablespoons of vegetable oil.
  2. Add minced garlic and ginger. Sauté for a minute until fragrant.
  3. Add chopped onions and green chilies. Sauté until the onions become translucent.
  4. Add sliced bell peppers and cook for a few more minutes until they start to soften.
  5. Stir in soy sauce, tomato ketchup, chili sauce, sugar, salt, and black pepper. Mix well.
  6. Pour in 1/4 cup of water and bring the sauce to a simmer.
  7. Stir in the cornstarch-water mixture to thicken the sauce. Continue stirring until it reaches your desired consistency.
  8. Add the fried cauliflower florets to the sauce and toss them gently, ensuring they are well coated.
  9. Cook for a few more minutes to allow the cauliflower to absorb the flavors.

  • Adjust the spice level by varying the amount of green chilies and chili sauce.
  • You can add other vegetables like carrots, broccoli, or snow peas for extra flavor and nutrition.
