INGREDIENTS
- 1 block (14 oz) extra-firm tofu, drained and pressed
- 2 tablespoons olive oil
- 1/2 onion, finely chopped
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1/2 cup diced tomatoes (canned or fresh)
- 1/2 cup spinach or kale, chopped
- 1/2 teaspoon turmeric powder (for color)
- 1/2 teaspoon cumin powder
- 1/2 teaspoon paprika
- Salt and black pepper to taste
- Optional toppings: sliced green onions, chopped cilantro, nutritional yeast, avocado slices, hot sauce

INSTRUCTIONS
Preparing the Tofu:
- Drain the tofu and wrap it in a clean kitchen towel or paper towels.
- Place something heavy on top (like a cast-iron skillet) to press out excess moisture. Leave it for about 20-30 minutes.
- Once pressed, crumble the tofu with your hands to resemble scrambled eggs. Set aside.
Making the Tofu Scramble:
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
- Add the finely chopped onion and diced bell pepper. Sauté for 3-4 minutes until they begin to soften.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the crumbled tofu to the skillet and stir well to combine with the vegetables.
