
Vegan Bhindi Masala Okra Curry

Vegan Bhindi Masala is a delicious Indian curry featuring tender okra cooked in a flavorful tomato-based gravy with aromatic spices. This vegan version offers all the rich flavors of the traditional dish without any dairy or animal products.
INGREDIENTS
For the Curry:
- 2 cups fresh okra (bhindi), washed, dried, and sliced into rounds
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1-inch piece of ginger, minced
- 2 tomatoes, finely chopped
- 1/2 cup tomato puree
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cumin
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (adjust to taste)
- 1 teaspoon garam masala
- Salt, to taste
- Fresh cilantro leaves for garnish
- Lemon wedges for serving (optional)
INSTRUCTIONS
Preparing the Okra:
- Wash the fresh okra and pat them dry with a clean kitchen towel.
- Trim the ends and slice the okra into rounds. Set aside.
Making the Bhindi Masala:
- Heat 2 tablespoons of vegetable oil in a large skillet or pan over medium-high heat.
- Add the finely chopped onion and sauté for 3-4 minutes until they start to turn translucent.
- Stir in the minced garlic and ginger. Cook for another minute until fragrant.
- Add the sliced okra to the skillet. Cook, stirring occasionally, for about 10-12 minutes until the okra becomes tender and starts to brown. Remove the okra from the skillet and set it aside.
- In the same skillet, add the finely chopped tomatoes and cook for 5-7 minutes until they break down and become soft.
- Stir in the tomato puree and cook for an additional 2-3 minutes.
- Add the ground coriander, ground cumin, turmeric powder, red chili powder, garam masala, and salt. Mix well to combine the spices with the tomato mixture.
- Return the cooked okra to the skillet and stir to coat the okra with the tomato-spice mixture.
- Let the curry simmer for 5-7 minutes to allow the flavors to meld together and the okra to absorb the spices.
TIPS
- Be careful when cooking the okra to avoid over-stirring, as it can become slimy.
- Adjust the level of spiciness by varying the amount of red chili powder.
- Serve Bhindi Masala with rice or Indian bread like roti or naan for a complete meal.
