
Vegan Aloo Gobi Potato and Cauliflower Curry
Vegan Aloo Gobi, a classic Indian dish, is a comforting and flavorful potato and cauliflower curry. In this vegan version, tender potato cubes and cauliflower florets are simmered in a rich and aromatic tomato-based sauce infused with a blend of spices.
INGREDIENTS
- 2 tablespoons vegetable oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1 teaspoon cumin seeds
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper (adjust to your spice preference)
- 2 medium potatoes, peeled and diced
- 1 small cauliflower, cut into florets
- 2 tomatoes, chopped
- 1 cup water or vegetable broth
- Salt to taste
- Fresh cilantro leaves, chopped, for garnish (optional)
INSTRUCTIONS
Sauté the Aromatics:
In a large skillet or wide saucepan, heat the vegetable oil over medium heat.
Add the cumin seeds and sauté for a minute or until they start to sizzle.
Stir in the finely chopped onion and sauté for 2-3 minutes until it becomes translucent.
Add the minced garlic and grated ginger. Sauté for another 1-2 minutes until fragrant.
Add the Spices:
- Stir in the ground coriander, ground cumin, ground turmeric, paprika, and cayenne pepper. Cook for a minute to toast the spices.
Cook the Potatoes and Cauliflower:
Add the diced potatoes and cauliflower florets to the skillet. Stir well to coat them with the spices.
Pour in the chopped tomatoes and cook for 2-3 minutes until they start to soften.
Add water or vegetable broth to the skillet. Cover and simmer for about 15-20 minutes, or until the potatoes and cauliflower are tender.
Finish the Aloo Gobi:
Season with salt to taste and adjust the seasonings as needed.
Simmer for an additional 5 minutes to allow the flavors to meld together.
Serve Vegan Aloo Gobi:
Garnish with chopped fresh cilantro leaves if desired.
