INGREDIENTS

  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 sweet potatoes, peeled and diced
  • 1 can (14 oz) chickpeas, drained and rinsed
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon chili powder (adjust to your spice preference)
  • Salt and pepper to taste

INSTRUCTIONS

Prepare the Stew:

  1. In a large pot, heat the vegetable oil over medium heat.

  2. Add the finely chopped onion and sauté for 2-3 minutes until it becomes translucent.

  3. Stir in the minced garlic and grated ginger. Sauté for another 1-2 minutes until fragrant.

  4. Add the diced sweet potatoes to the pot and cook for about 5 minutes, stirring occasionally, until they begin to soften.

  5. Stir in the ground cumin, ground coriander, ground turmeric, chili powder, salt, and pepper. Cook for a minute to toast the spices.

  6. Add the drained and rinsed chickpeas, diced tomatoes (with their juice), and vegetable broth to the pot. Stir to combine.

  7. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 20-25 minutes or until the sweet potatoes are tender and the stew has thickened.
