Moong Dal Mung Bean Khichdi

INGREDIENTS
- 1 cup moong dal (mung beans), washed and soaked
- 1 cup rice, washed and soaked
- 1 onion, finely chopped
- 1 tomato, chopped
- 1/2 cup mixed vegetables (carrots, peas, beans), chopped
- 2-3 cloves garlic, minced
- 1 teaspoon ginger paste
- 1/2 teaspoon turmeric powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- 1/2 teaspoon red chili powder (adjust to taste)
- Salt to taste
- 2 tablespoons ghee or oil
- 1/2 teaspoon cumin seeds
- 4-5 cups water
- Fresh cilantro leaves, chopped (for garnishing)
- Lemon wedges (for serving)
INSTRUCTIONS
Prepare Moong Dal and Rice: Wash and soak the moong dal and rice separately for about 30 minutes. Drain before using.
Sauté Aromatics: In a large pot, heat ghee or oil over medium heat. Add cumin seeds and let them splutter.
Add Onion and Garlic: Add chopped onions and sauté until they become translucent. Add minced garlic and ginger paste. Sauté for a minute until fragrant.
Add Vegetables: Add chopped tomatoes and mixed vegetables. Cook until the tomatoes soften and the vegetables start to cook.
Add Spices: Stir in turmeric powder, cumin powder, coriander powder, garam masala, red chili powder, and salt. Mix well to coat the vegetables with the spices.
Add Moong Dal and Rice: Drain the soaked moong dal and rice, and add them to the pot. Mix well with the onion and spice mixture.
Add Water: Pour in 4-5 cups of water, depending on the desired consistency of the khichdi.
Cook Khichdi: Bring the mixture to a boil. Lower the heat, cover the pot, and let the khichdi simmer for about 20-25 minutes, or until the rice and dal are fully cooked and the khichdi has a porridge-like consistency.
Adjust Seasoning: Taste and adjust the salt and spiciness according to your preference.
Serve: Garnish the moong dal khichdi with chopped cilantro leaves. Serve with yogurt, pickles, or lemon wedges for added flavor.
