INGREDIENTS

  • 4-6 slices of your favorite vegan bread (such as whole wheat or sourdough)
  • 1 cup unsweetened plant-based milk (such as almond, soy, or oat milk)
  • 2 tablespoons chickpea flour (or other plant-based flour)
  • 1 tablespoon nutritional yeast (optional, for flavor)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon maple syrup or agave syrup
  • Pinch of salt
  • Coconut oil or cooking spray, for frying
  • Fresh fruit, maple syrup, or powdered sugar for serving (optional)

INSTRUCTIONS

  1. In a mixing bowl, whisk together the plant-based milk, chickpea flour, nutritional yeast (if using), ground cinnamon, vanilla extract, maple syrup, and a pinch of salt. Mix until well combined and smooth.

  2. Heat a non-stick skillet or frying pan over medium heat and lightly grease it with coconut oil or cooking spray.
