Cottage Cheese and Spinach Stuffed Mushrooms are a flavorful and satisfying appetizer that brings together the earthy richness of mushrooms with a creamy cottage cheese and spinach filling. These stuffed mushrooms are not only delicious but also a great way to incorporate vegetables and protein into your meal.

INGREDIENTS

  • 16-20 large button mushrooms, cleaned and stems removed
  • 1 cup cottage cheese (paneer), crumbled
  • 1 cup fresh spinach, chopped
  • 1 small onion, finely chopped
  • 2-3 cloves garlic, minced
  • 1 teaspoon olive oil or cooking oil of your choice
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon paprika or red chili powder
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional, for topping)
  • Chopped fresh parsley or cilantro for garnishing

INSTRUCTIONS

  1. Preheat your oven to 375°F (190°C).

  2. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

  3. Add the finely chopped onion and sauté until translucent.

  4. Add the chopped spinach and cook for a few minutes until wilted. Remove from heat and let it cool.

  5. In a mixing bowl, combine the crumbled cottage cheese, sautéed spinach and onion mixture, cumin powder, paprika or red chili powder, salt, and pepper. Mix well to combine.

  6. Carefully stuff each mushroom cap with the cottage cheese and spinach mixture.

  7. Place the stuffed mushrooms on a baking sheet lined with parchment paper.

  8. Bake in the preheated oven for about 15-20 minutes, or until the mushrooms are tender and the filling is heated through.

  9. If desired, in the last few minutes of baking, sprinkle a little grated Parmesan cheese on top of each stuffed mushroom and return them to the oven until the cheese is melted and slightly golden.
