Quinoa and Vegetable Cutlets are a delightful way to incorporate quinoa and vegetables into a tasty snack or appetizer. INGREDIENTS

  • 1 cup cooked quinoa
  • 1 cup mixed vegetables (carrots, peas, corn, bell peppers), finely chopped or grated
  • 1 small onion, finely chopped
  • 2-3 cloves garlic, minced
  • 1 teaspoon ginger paste or grated ginger
  • 1 teaspoon cumin powder
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • 2 tablespoons chopped fresh cilantro or parsley
  • 2 tablespoons breadcrumbs (for binding)
  • 1-2 tablespoons oil (for cooking)
  • Lemon wedges for serving
  • Optional: 1/4 cup crumbled feta cheese or grated cheese (for added flavor and binding)

INSTRUCTIONS

  1. In a large mixing bowl, combine the cooked quinoa, finely chopped mixed vegetables, chopped onion, minced garlic, ginger paste, cumin powder, coriander powder, red chili powder, turmeric powder, salt, chopped cilantro, and breadcrumbs. If using cheese, add it at this stage.

  2. Mix all the ingredients well to form a uniform mixture. The mixture should hold its shape when pressed together.

  3. Divide the mixture into equal portions and shape each portion into flat patties or cutlets.

  4. Heat oil in a pan over medium heat. Place the cutlets in the pan and cook until they are golden brown and crisp on both sides. This will take about 3-4 minutes per side.

  5. Once the cutlets are cooked, transfer them to a paper towel-lined plate to absorb any excess oil.
