INGREDIENTS
- 2 medium zucchinis, washed and sliced into thin rounds
- 1/4 cup breadcrumbs (can use panko breadcrumbs for extra crunch)
- 1/4 cup grated Parmesan cheese
- 1 teaspoon dried herbs (such as oregano, thyme, or basil)
- 1/2 teaspoon garlic powder
- 1/4 teaspoon paprika
- Salt and pepper to taste
- 1-2 tablespoons olive oil
- Cooking spray or additional olive oil for greasing
INSTRUCTIONS
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray or a thin layer of olive oil.
In a shallow bowl or plate, mix together the breadcrumbs, grated Parmesan cheese, dried herbs, garlic powder, paprika, salt, and pepper.
Brush both sides of the zucchini slices with a thin layer of olive oil.
Dip each zucchini slice into the breadcrumb mixture, pressing gently to adhere the mixture to the zucchini.
Place the coated zucchini slices on the prepared baking sheet in a single layer, making sure they do not overlap.
Lightly spray the top of the zucchini slices with cooking spray for extra crispiness, or drizzle a little more olive oil over them.
Bake the zucchini chips in the preheated oven for about 15-20 minutes, flipping them halfway through, or until they are golden brown and crispy.
Keep an eye on them during the last few minutes of baking to prevent burning.
Once the zucchini chips are baked to your desired level of crispiness, remove them from the oven and let them cool slightly.
