INGREDIENTS

For Grilled Vegetable and Tofu Skewers:

  • 1 block firm tofu, pressed and cut into cubes
  • Assorted vegetables (bell peppers, zucchini, red onion, cherry tomatoes, mushrooms), cut into chunks
  • Wooden skewers, soaked in water for 30 minutes

For Marinade:

  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried herbs (such as thyme, oregano, rosemary)
  • Salt and pepper to taste

INSTRUCTIONS

Marinade:

  1. In a bowl, whisk together olive oil, balsamic vinegar, minced garlic, dried herbs, salt, and pepper to create the marinade.

Grilled Vegetable and Tofu Skewers:

  1. Place the tofu cubes in a bowl and pour half of the marinade over them. Gently toss to coat the tofu. Let it marinate for about 15-20 minutes.

  2. Preheat the grill to medium-high heat.

  3. Thread the marinated tofu cubes and vegetable chunks onto the soaked wooden skewers, alternating between tofu and vegetables.

  4. Brush the remaining marinade over the assembled skewers.

  5. Place the skewers on the preheated grill and cook for about 10-15 minutes, turning occasionally, until the vegetables are tender and the tofu is slightly browned.

Assembling the Dish:

  1. Carefully remove the grilled vegetable and tofu skewers from the grill.

  2. Serve the skewers on a platter.

  3. Garnish with fresh herbs if desired.

  • Feel free to use any combination of vegetables you prefer or have on hand.

  • You can add a splash of lemon juice or honey to the marinade for extra flavor.
