Chicken Kathi Roll
Chicken Kathi Roll is a popular street food from Kolkata, India. It consists of flavorful and spiced chicken filling wrapped in a paratha (Indian flatbread). This delicious and satisfying roll is perfect as a snack or a light meal. The chicken is marinated in a mixture of spices, cooked to perfection, and then wrapped with a tangy and spicy yogurt sauce, onions, and fresh herbs. INGREDIENTS
For the chicken filling:
- 300 grams boneless chicken, cut into small pieces
- 2 tablespoons yogurt
- 1 tablespoon ginger-garlic paste
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 tablespoon lemon juice
- Salt to taste
- 2 tablespoons oil
For the yogurt sauce:
- 1/2 cup yogurt
- 1 tablespoon chopped mint leaves
- 1 tablespoon chopped coriander leaves
- 1 teaspoon chaat masala
- Salt to taste
For the roll:
- 4 parathas or rotis (Indian flatbreads)
- Sliced onions
- Chopped fresh coriander leaves
- Lemon wedges
INSTRUCTIONS
In a bowl, marinate the chicken pieces with yogurt, ginger-garlic paste, turmeric powder, red chili powder, cumin powder, coriander powder, lemon juice, and salt. Mix well and let it marinate for at least 30 minutes.
Heat oil in a pan over medium heat. Add the marinated chicken and cook until it is tender and cooked through, stirring occasionally. This should take around 8-10 minutes. Remove from heat and set aside.
In a separate bowl, whisk together yogurt, chopped mint leaves, chopped coriander leaves, chaat masala, and salt to make the yogurt sauce. Set aside.
Heat the parathas or rotis on a tawa or griddle until they are warm and pliable.
To assemble the Kathi Rolls, place a paratha or roti on a flat surface. Spread a generous amount of the yogurt sauce on the paratha. Add a portion of the cooked chicken filling on top of the yogurt sauce.
Sprinkle some sliced onions and chopped fresh coriander leaves over the chicken filling.
Roll the paratha tightly, enclosing the filling. You can wrap it in parchment paper or aluminum foil to hold it together.
Repeat the process for the remaining parathas and filling.
Serve the Chicken Kathi Rolls hot with lemon wedges on the side.
