INGREDIENTS
- 4 eggs
- 1 medium onion, finely chopped
- 1 medium tomato, finely chopped
- 1 green chili, finely chopped (adjust according to spice preference)
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (adjust according to spice preference)
- 1/2 teaspoon cumin powder
- 1/2 teaspoon garam masala powder
- Salt to taste
- Fresh coriander leaves for garnish
- Oil or ghee for cooking
INSTRUCTIONS
Heat oil or ghee in a pan or skillet over medium heat.
Add the finely chopped onions and sauté until they turn translucent and slightly golden brown.
Add the green chili and sauté for a minute.
Add the finely chopped tomatoes and cook until they become soft and mushy.
Add turmeric powder, red chili powder, cumin powder, garam masala powder, and salt. Mix well and cook for a minute to allow the spices to release their flavors.
Crack the eggs directly into the pan and quickly stir them to scramble them with the masala. Continuously stir and cook until the eggs are fully cooked and the masala is well combined.
Once the eggs are cooked, garnish with freshly chopped coriander leaves.
Serve hot Anda Bhurji with roti, bread, or as a side dish with any Indian meal.
