Moroccan Spiced Roasted Chicken

5/5

Moroccan spiced roasted chicken is a flavorful and aromatic dish inspired by the traditional flavors of Morocco. The chicken is marinated in a blend of warm spices, herbs, and citrus, then roasted to perfection, resulting in juicy and tender meat with a deliciously crispy skin. This dish is perfect for special occasions or as a centerpiece for a family dinner.

INGREDIENTS

  • 4-6 bone-in chicken pieces (such as drumsticks, thighs, or a combination)
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground turmeric
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish

INSTRUCTIONS

  1. In a large bowl, whisk together olive oil, lemon juice, minced garlic, cumin, coriander, paprika, cinnamon, ginger, turmeric, salt, and pepper to create the marinade.
  2. Add the chicken pieces to the marinade and coat them well. Cover the bowl and let the chicken marinate in the refrigerator for at least 2 hours or overnight for maximum flavor.
  3. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  4. Arrange the marinated chicken pieces on the prepared baking sheet, leaving some space between each piece.
  5. Roast the chicken in the preheated oven for about 35-40 minutes, or until the chicken is cooked through and the skin is golden and crispy. The internal temperature should reach 165°F (74°C).
  6. Remove the chicken from the oven and let it rest for a few minutes. Garnish with fresh cilantro or parsley before serving.
  7. Serve the Moroccan spiced roasted chicken with couscous, rice, or a side salad. Enjoy!

TIPS

  1. Adjust the spice levels according to your preference. Add more paprika or cayenne pepper for extra heat, or reduce the amount if you prefer a milder flavor.
  2. For a more intense flavor, marinate the chicken for longer or overnight.
  3. Serve the roasted chicken with a squeeze of fresh lemon juice for added brightness.
  4. Feel free to include additional vegetables such as bell peppers, onions, or carrots on the baking sheet for a one-pan meal.
  5. Leftovers can be refrigerated and enjoyed cold or reheated for another meal
