INGREDIENTS
- Cabbage: 1 small head, finely chopped or grated
- Coconut: 1/2 cup, grated
- Mustard seeds: 1/2 teaspoon
- Urad dal (split black gram): 1/2 teaspoon
- Curry leaves: a few
- Green chili: 1, finely chopped
- Turmeric powder: 1/4 teaspoon
- Salt to taste
- Coconut oil: 1 tablespoon
INSTRUCTIONS
- Heat coconut oil in a pan or kadhai over medium heat.
- Add mustard seeds and urad dal. Let them splutter.
- Add curry leaves and green chili. Sauté for a minute.
- Add the grated cabbage to the pan and mix well.
- Add turmeric powder and salt. Mix again.
- Cover the pan and cook for 5-7 minutes until the cabbage is tender, stirring occasionally.
- Add grated coconut to the pan and mix well.
- Cook for another 2-3 minutes until the flavors are well combined and the coconut is slightly toasted.
- Remove from heat and serve hot.
TIPS
- Finely chop or grate the cabbage for a uniform texture in the dish.
- Adjust the spiciness by adding more or fewer green chilies according to your preference.
- You can also add a pinch of asafoetida (hing) while tempering for additional flavor.
- Be careful not to overcook the cabbage, as it can become mushy. Cook until it is just tender.
- Freshly grated coconut adds a wonderful taste to the dish, but you can also use desiccated coconut if fresh coconut is not available.
- Serve Cabbage Thoran as a side dish with steamed rice or as an accompaniment to roti or paratha.
