INGREDIENTS
- 200 grams paneer (Indian cottage cheese), crumbled
- 1 tablespoon oil or ghee (clarified butter)
- 1 teaspoon cumin seeds
- 1 onion, finely chopped
- 1 green chili, finely chopped
- 1 teaspoon ginger-garlic paste
- 1 tomato, finely chopped
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (adjust to taste)
- 1/2 teaspoon garam masala
- Salt to taste
- Fresh cilantro (coriander leaves) for garnish
INSTRUCTIONS
- Heat oil or ghee in a pan over medium heat.
- Add cumin seeds and let them splutter.
- Add the chopped onion and green chili. Sauté until the onion turns golden brown.
- Add ginger-garlic paste and sauté for a minute until the raw smell disappears.
- Add the chopped tomato and cook until it becomes soft and mushy.
- Add turmeric powder, red chili powder, and salt. Mix well.
- Crumble the paneer and add it to the pan. Mix gently to coat the paneer with the spices.
- Cook for 3-4 minutes, stirring occasionally, until the paneer is heated through and well combined with the spices.
- Sprinkle garam masala and mix well.
- Garnish with fresh cilantro leaves.
- Serve hot with roti (Indian bread), paratha, or as a filling in sandwiches.
TIPS
- Adjust the spices according to your taste preference. You can increase or decrease the amount of red chili powder and green chili to make it more or less spicy.
- You can add other vegetables like bell peppers, peas, or spinach to the bhurji for added flavor and nutrition.
- To make it creamier, you can add a tablespoon of fresh cream or yogurt towards the end of cooking.
- For a vegan version, you can substitute paneer with crumbled tofu or mashed cooked chickpeas.
- Garnish with freshly chopped cilantro leaves for added freshness and flavor.
