INGREDIENTS
- 2 boneless, skinless chicken breasts
- 4 cups water
- 1 onion, chopped
- 2 carrots, sliced
- 1 celery stalk, chopped
- 1 cup chopped cabbage
- 1 cup chopped spinach
- 1 teaspoon ginger, grated
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- Salt and pepper to taste
- Fresh cilantro or parsley for garnish (optional)
INSTRUCTIONS
In a large pot, bring the water to a boil. Add the chicken breasts and cook for about 10-12 minutes, or until they are cooked through. Remove the chicken from the pot and set it aside to cool.
Once the chicken has cooled, shred it into bite-sized pieces using a fork or your fingers. Set the shredded chicken aside.
In the same pot, add the chopped onion, sliced carrots, chopped celery, grated ginger, and minced garlic. Cook over medium heat for about 5 minutes, or until the vegetables start to soften.
Add the shredded chicken back to the pot and pour in the soy sauce. Stir well to combine.
Pour in the water used to boil the chicken, or you can use chicken broth for added flavor. Bring the soup to a boil, then reduce the heat and let it simmer for about 10 minutes to allow the flavors to meld together.
Add the chopped cabbage and spinach to the pot. Stir and continue simmering for another 5 minutes, or until the vegetables are tender.
Season the soup with salt and pepper to taste. Adjust the seasoning according to your preference.
Remove the pot from the heat. Ladle the Chicken Clear Soup with Steamed Vegetables into serving bowls.
Garnish with fresh cilantro or parsley, if desired.
TIPS
- You can customize the vegetables in the soup based on your preference. Feel free to add or substitute with other vegetables like broccoli, mushrooms, or bell peppers.
- To steam the vegetables, you can use a steamer basket or simply place them in a colander over boiling water. Cover and steam until they are tender.
- If you prefer a more flavorful broth, you can add herbs and spices such as bay leaves, thyme, or black peppercorns while boiling the chicken.
- For added heat, you can add a pinch of red chili flakes or a few drops of hot sauce to the soup.
- This soup can be enjoyed as a light meal on its own or served with a side of whole wheat bread or steamed rice for a more filling option.
