INGREDIENTS
For the Lemon Garlic Shrimp:

- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1/2 teaspoon red chili flakes (optional)
- Salt and pepper to taste
For the Cauliflower Rice:
- 1 medium-sized cauliflower head
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley or coriander leaves for garnishing
INSTRUCTIONS
Prepare the Cauliflower Rice:
- Cut the cauliflower into florets and wash them thoroughly.
- Place the florets in a food processor and pulse until they resemble rice-like grains.
- Heat olive oil in a pan over medium heat. Add chopped onion and minced garlic. Sauté until they become translucent.
- Add the cauliflower rice to the pan and cook for 5-7 minutes, stirring occasionally, until it becomes tender. Season with salt and pepper. Remove from heat and set aside.
Cook the Lemon Garlic Shrimp:
- In a bowl, combine minced garlic, olive oil, lemon juice, lemon zest, red chili flakes (if using), salt, and pepper.
- Add the shrimp to the bowl and toss well to coat them evenly with the marinade. Let it marinate for about 10-15 minutes.
- Heat a skillet or frying pan over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes on each side until they turn pink and opaque.
- Once cooked, remove the shrimp from the pan and set aside.
Serve:
- Divide the cauliflower rice into serving plates. Top with the lemon garlic shrimp.
- Garnish with fresh parsley or coriander leaves for added freshness and flavor.
TIPS
- Use fresh shrimp for the best flavor and texture. You can also adjust the amount of garlic, lemon juice, and red chili flakes according to your taste preferences.
- Be mindful of the cooking time for the shrimp to avoid overcooking, as it can become rubbery.
- If you prefer a milder flavor, reduce the amount of garlic and lemon zest.
- Customize the dish by adding your favorite vegetables to the cauliflower rice, such as bell peppers, carrots, or peas.
- Feel free to add additional herbs and spices to the dish, such as paprika, cumin, or parsley, to enhance the flavor profile.
