SPICY SHRIMP WITH CAULIFLOWER RICE RECIPE

INGREDIENTS
- 300 grams shrimp, peeled and deveined
- 1 small cauliflower, grated or processed into rice-like texture
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 2 green chilies, finely chopped
- 1 tablespoon ginger-garlic paste
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves for garnish
- Lemon wedges for serving
- 1 tablespoon vegetable oil
INSTRUCTIONS
Heat the vegetable oil in a pan or skillet over medium heat. Add the chopped onion and green chilies. Sauté until the onion turns golden brown.
Add the ginger-garlic paste and sauté for a minute until fragrant.
Add the chopped tomatoes and cook until they soften and release their juices.
Add the turmeric powder, red chili powder, cumin powder, coriander powder, garam masala, and salt. Stir well to combine the spices with the tomato mixture.
Add the shrimp to the pan and cook for about 3-4 minutes until they turn pink and are cooked through.
Remove the cooked shrimp from the pan and set them aside.
In the same pan, add the grated cauliflower rice. Stir-fry for a few minutes until the cauliflower is cooked but still retains its texture.
Return the cooked shrimp to the pan with the cauliflower rice. Mix well to combine.
Garnish with fresh coriander leaves and serve hot with lemon wedges.
TIPS
To make cauliflower rice, cut the cauliflower into florets and process them in a food processor until they resemble rice-like grains. Alternatively, you can use a grater to achieve a similar texture.
Adjust the spice levels according to your preference. Add more or less red chili powder and green chilies to make the dish spicier or milder.
You can add additional vegetables to the dish, such as bell peppers, peas, or carrots, to enhance the nutritional value and add more texture and color.
