INGREDIENTS

For Lentil Curry:

  • 1 cup lentils (any variety), washed and soaked for 30 minutes
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 2 garlic cloves, minced
  • 1-inch ginger, grated
  • 1 green chili, finely chopped (optional)
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • Salt to taste
  • Fresh coriander leaves for garnish
  • Lemon wedges for serving

For Brown Rice:

  • 1 cup brown rice
  • 2 cups water
  • Salt to taste

INSTRUCTIONS

  1. Rinse the brown rice under running water to remove any impurities.
  2. In a pot, add the rinsed brown rice, water, and salt. Bring it to a boil, then reduce the heat, cover, and simmer for about 40-45 minutes or until the rice is cooked and tender. Set aside.
  3. Heat a tablespoon of oil in a pan over medium heat. Add cumin seeds and let them splutter.
  4. Add the chopped onions and sauté until they turn golden brown.
  5. Add the minced garlic, grated ginger, and green chili (if using). Sauté for another minute.
  6. Add the chopped tomatoes and cook until they become soft and mushy.
  7. Add the coriander powder, turmeric powder, red chili powder, and salt. Mix well.
  8. Drain the soaked lentils and add them to the pan. Stir everything together.
  9. Add enough water to cover the lentils. Bring it to a boil, then reduce the heat and let it simmer for about 25-30 minutes or until the lentils are cooked and tender.
  10. Once the lentils are cooked, garnish with fresh coriander leaves.
  11. Serve the lentil curry hot with brown rice and lemon wedges.

  1. Experiment with different types of lentils like green lentils, red lentils, or black lentils to vary the flavors and textures of the curry.
