Grilled Portobello Mushroom Caps are a nutritious and low-calorie option for Indian weight loss diets. INGREDIENTS

  • 4 large portobello mushroom caps
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper

INSTRUCTIONS

  1. Preheat your grill to medium heat.
  2. Clean the portobello mushroom caps by gently wiping them with a damp paper towel to remove any dirt. Remove the stems if desired.
  3. In a small bowl, whisk together balsamic vinegar, olive oil, minced garlic, dried thyme, salt, and black pepper.
  4. Brush both sides of the mushroom caps generously with the marinade mixture.
  5. Place the mushroom caps on the preheated grill, gill-side down. Cook for about 5 minutes, or until grill marks appear.
  6. Flip the mushroom caps and continue grilling for another 5 minutes, or until the mushrooms are tender and cooked through.
  7. Remove the mushroom caps from the grill and let them cool for a few minutes before serving.

TIPS

  1. Choose large, firm portobello mushroom caps for grilling. Avoid ones that are slimy or have a strong odor.
  2. Feel free to customize the marinade by adding herbs and spices of your choice, such as rosemary, paprika, or oregano.
  3. If you don’t have a grill, you can also cook the mushroom caps on a stovetop grill pan or in the oven under the broiler.
