Vegetable Idli is a nutritious and delicious South Indian dish made with a fermented batter of rice and lentils, mixed with a variety of vegetables. The rice and lentils are soaked, ground, and fermented to create a fluffy batter. Mixed vegetables like grated carrots, finely chopped beans, and peas are sautéed and added to the batter. The batter is then steamed in idli molds to form soft and spongy idlis. Vegetable Idlis are a healthy and versatile option for breakfast or a snack, and they can be served with sambar, chutney, or any side dish of your choice. They are not only rich in nutrients but also a great way to incorporate vegetables into your diet.

INGREDIENTS

  • 1 cup idli rice or regular rice
  • 1/2 cup split black lentils (urad dal)
  • 1/4 cup flattened rice (poha)
  • 1 cup mixed vegetables (such as grated carrots, finely chopped beans, peas, etc.)
  • 1/2 teaspoon ginger paste
  • 1 green chili, finely chopped (adjust to taste)
  • 1/4 teaspoon asafoetida (hing)
  • Salt to taste
  • 1 teaspoon oil for greasing idli molds

INSTRUCTIONS

  1. Wash the rice and urad dal separately and soak them in water for about 4-6 hours. Also, rinse the flattened rice (poha) and soak it separately for about 20 minutes.
  2. After soaking, drain the water from the rice, dal, and poha. Grind the rice and poha together to a smooth batter consistency. Similarly, grind the urad dal separately to a smooth and fluffy consistency.
  3. In a large bowl, mix the rice batter and urad dal batter together. Add salt and mix well. Let the batter ferment for about 8-10 hours or overnight in a warm place.
  4. After fermentation, the batter will rise and become fluffy. Mix the batter gently.
  5. Heat a pan with oil and sauté the mixed vegetables, ginger paste, green chili, and asafoetida for a few minutes until the vegetables are slightly cooked. Set aside.
  6. Grease the idli molds with oil.
  7. Add the sautéed vegetables to the idli batter and mix well.
  8. Pour the batter into the greased idli molds, filling each mold about 3/4th full.
  9. Steam the idlis in a steamer for about 10-12 minutes or until a toothpick inserted comes out clean.
  10. Once done, remove the idlis from the steamer and let them cool for a minute.
  11. Gently remove the idlis from the molds using a spoon or a knife.
  12. Serve the Vegetable Idlis hot with sambar, chutney, or any side dish of your choice.
